Mediterranean style roasted mixed vegetables

If you have odds and ends of vegetables left over this is a great way to use them up, either as a side dish or a vegetarian meal in itself.

First of all sort out what you have and then, peel, roughly chop and discard any bad bits. Remember to keep the seeds from the peppers for growing.

You can pretty much use any firm vegetables, potatoes, swede, onions, peppers, leeks, carrots aubergines, potatoes and of course garlic.



There are many other vegetables too use what you have available. It 
Once you have prepared your vegetables put a large roasting tin in the oven with a decent layer of cooking oil. 

Olive oil will give it a Mediterranean flavour but Corn oil, Vegetable oil or Rapeseed oil work just as well too. 

You can even use a flavoured or herb infused oil to add extra flavour.

I would recommend cooking this at 180c (fan) or 200c standard oven setting. Ovens vary and so does the size of the chopped vegetables but approximately 40 minutes should be about right.

Once the oil is up to temperature bring the tray out using an oven glove and add the vegetables, season well with coarse salt and black pepper. I added some dried Oregano too but add any herbs you have, as always experiment.



keep checking as ingredient like red onions are easily overcooked. If adding garlic cloves don't peel them, I added an entire bulb's worth but then I love garlic. It also keeps it rustic.

Toss them well in the hotel to give them a good coating. Put the tray back in the oven and keep checking, turning the vegetables occasionally.

That is pretty much it, as I said this makes a great vegetarian meal or an accompaniment to a dish.

I served it with Roast/grilled chicken thighs with a spicy Korean sauce but there are unlimited options.
